Butter Pecan Cupcakes with Rum Frosting




Yesterday was my dear husband's actual birthday. Even though we threw him a party this weekend, Jackson insisted that we needed to make him a special cake.
When I asked what we should make, he insisted on more cupcakes.

I decided we should make some pirate themed cupcakes with a grown up flavor. These are Butter Pecan Cupcakes with a Rum flavored Buttercream frosting. An easy dressed up box of cake mix, you can do this with just about any flavor you like.

Side note: These cupcake liners are StayBright's from Reynolds and they are AMAZING!!! The insides are foil and the outside design didn't fade a bit!

 He did a great job, didn't he? Now it's YOUR turn!

Ingredients:
Cupcake
1 box cake mix
1 cup all-purpose flour
1 cup granulated sugar
3/4 teaspoons salt
1 1/3 cups water
2 Tablespoons vegetable oil
1 teaspoon pure vanilla extract
1 cup sour cream
4 large egg whites
Frosting
(This pipes about 36 cupcakes like I've done in the photo; not totally covered. If you like more, you'll need to double the recipe.)
3 cups powdered sugar
1 cup butter (2 sticks), at room temperature
1 teaspoon rum flavored extract
1 to 2 Tablespoons whipping cream

Directions:
Cupcakes
1. Preheat oven to 350°F. Line cupcakes pans with about 36 liners.
2. In a large bowl, whisk together cake mix, flour, sugar and salt. Add remaining ingredients and beat with hand mixer for about 2 minutes, or until well blended.
3. Fill prepared tins about 3/4 full and bake about 18-20 minutes, or until toothpick inserted in center comes out clean.
Frosting
1. In mixing bowl, cream together sugar and butter on low speed. Mix until well blended. Increase speed to medium and beat for another 3 minutes.
2. Add rum extract and cream and continue to beat on medium speed for 1 minute more.

  1. Oooo I love the cupcake liners! I have those, the monkey ones and some white and black swirly ones. I was surprised that the design really didn't fade at all!

  6. Delish...we did a spiced cake cupcake with Rum frosting for our Holiday Neighbor gifts...I've never tried butter pecan! I guess we will just have to make some...you can never have too many cupcakes!
